These beef koftas are so easy and versatile. As an alternative you can roll the mixture into meatballs or shape into patties. A great addition to your next BBQ.

Ingredients: 500g (1lb) beef mince 1 onion, chopped finely ½ cup peanut butter (smooth or crunchy) 1 egg 2 tsp curry powder salt and pepper to taste 2 tbsp finely chopped parsley (optional)

Method: Soak eight skewers in cold water for 30 minutes. Place all the ingredients in a bowl and mix to combine. Divide mixture into eight portions, shape into sausages and push onto the skewers. Barbecue or fry for 10 minutes or until cooked and golden. Serve with rice and a green salad.
