This recipe guarantees golden, crispy and juicy chicken that is full of flavour with very little effort. It’s quick enough to enjoy as a midweek meal yet elegant enough to serve at a dinner party.
Ingredients: 4 skinless chicken breasts 2 tsp Dijon mustard 1⁄2 cup panko breadcrumbs 1⁄2 cup finely grated parmesan cheese
2 tbsp olive oil 2 tbsp finely chopped flat-leaf parsley
2 tsp crushed garlic
salt and pepper to taste
Preheat oven to 180°C (350°F) and cover a baking tray with tin foil or baking paper.
Slice each chicken breast in half to make thin fillets.
Place the chicken on the baking tray and season with salt and pepper.
Spread the mustard over each fillet.
In a small bowl, mix the breadcrumbs, cheese, oil, parsley and garlic until well combined.
Sprinkle the mixture over the chicken.
Place in the oven and bake for 20 minutes or until cooked through and golden.
