This recipe guarantees golden, crispy and juicy chicken that is full of flavour with very little effort. It’s quick enough to enjoy as a midweek meal yet elegant enough to serve at a dinner party.

Ingredients: 4 skinless chicken breasts 2 tsp Dijon mustard 1⁄2 cup panko breadcrumbs 1⁄2 cup finely grated parmesan cheese

2 tbsp olive oil 2 tbsp finely chopped flat-leaf parsley

2 tsp crushed garlic

salt and pepper to taste


  • Preheat oven to 180°C (350°F) and cover a baking tray with tin foil or baking paper.

  • Slice each chicken breast in half to make thin fillets.

  • Place the chicken on the baking tray and season with salt and pepper.

  • Spread the mustard over each fillet.

  • In a small bowl, mix the breadcrumbs, cheese, oil, parsley and garlic until well combined.

  • Sprinkle the mixture over the chicken.

  • Place in the oven and bake for 20 minutes or until cooked through and golden.
