CHICKEN AND FETA PATTIES/RISSOLES


Don’t be fooled by the lack of ingredients in this recipe. These are delicious! There is so much you can do with this mixture: shape into burger patties, rissoles or even bite-size meatballs to enjoy as an appetizer.

Ingredients: 600g (1.3lb) chicken mince 80g (3oz) feta, cut into small cubes or crumbled 2 tsp crushed garlic 1⁄2 tsp each salt and pepper 2 tbsp pine nuts (optional)

Method: • Place all the ingredients in a large bowl and mix to combine. • Using wet hands, shape as desired. • Fry or barbeque for 3–4 minutes each side or until cooked through and golden brown.

Serves: 4 Prep Time: 5 minutes

Cooking Time: 6–8 minutes
