YEAST-FREE PIZZA BASE


A very popular recipe in my last book was the pizza dough, but not everyone has yoghurt on hand. Here is another recipe which is just as delicious and just as easy.

Ingredients: 1 ¾ cups self-raising flour plus extra if required

½ cup grated parmesan cheese ¼ cup olive oil cup boiling water plus extra if required

Method: • Preheat oven to 200°C (390°F) and grease a pizza or oven tray.

  • Place all the ingredients in a bowl and mix until a smooth dough forms (you may need to add a small amount of extra flour or water to achieve this).

  • Tip the dough onto a floured surface, knead for approx. 1 minute until smooth, then roll out to the desired thickness.

  • Place on the greased pizza or oven tray and top with your favorite toppings.

  • Bake for 12-15 minutes or until the pizza is golden and bubbling.

Serves: 4 (makes one large or two small pizzas)

Prep Time: 10 minutes Cooking Time: 12-15 minutes
