This cake can be served as a dessert or as a treat with coffee. I usually serve it with my homemade vanilla ice cream or whipped cream.

Ingredients: 125g (4.5oz) butter, melted 2 apples, peeled, cored and diced 1 cup self-raising flour 1 cup sugar 1 egg 1 tsp vanilla extract 1 tsp cinnamon (optional)

Method: Preheat oven to 180°C (350°F) and grease a 20 cm (8 inch) round cake tin. Place all the ingredients in a bowl and mix to combine. Pour into the prepared tin. Bake for 40–45 minutes or until golden. Serve warm or cold, and if you like, dust with icing sugar.
