You can have your own café-style brunch at home with this easy throw together recipe, and of course you can alter it according to your taste and what ingredients you have on hand. You can add chopped onion, mushrooms, capsicum, ham, fresh herbs, spinach – the list can go on. Don’t think you can only eat this for breakfast; it’s great for picnics, lunch and dinner. You can also prepare the entire dish the night before and leave it covered in the fridge until ready to cook in the morning.


METHOD

  • Preheat the oven to 180°C. Grease a 23cm × 33cm baking dish.

  • Arrange the hash browns in a single layer in the baking dish and scatter the chopped bacon over.

  • Place the eggs, milk or cream and salt in a bowl and season with pepper.

  • Whisk until well combined.

  • Pour over the hash browns and bacon, then sprinkle with grated cheese.

  • Bake, uncovered, for 45–50 minutes or until set and the cheese is golden.

  • Sprinkle with herbs, if using, and cut into pieces to serve.


INGREDIENTS

750g mini hash browns

5 rashers bacon, chopped

8 eggs

1⁄2 cup (125ml) milk or cream

1 tsp salt

2 cups (240g) grated tasty cheese

chopped herbs, to serve (optional)


PREP TIME: 10 MINUTES

COOKING TIME: 45–50 MINUTES

SERVES: 6–8
