A dish of homemade roasted nuts is the perfect party snack, and these little
morsels will go down a treat. You can customise the mix of nuts you use, but here
are some suggestions: walnuts, pecans, almonds, cashews, Brazil nuts, or skinless
peanuts or hazelnuts.
Ingredients:
50g (2oz) butter
2 tbsp honey or maple syrup
1 tsp ground cumin
1½ tsp salt
¼ tsp cayenne pepper or ground chilli (or more if you like it hotter)
4 cups mixed nuts
Method:
• Preheat oven to 170°C (340°F) and grease and line a baking tray.
• Place all the ingredients, apart from the nuts, into a large saucepan and gently heat, stirring until the butter has melted.
• Add the nuts and mix until they are well coated.
• Tip the nuts onto the prepared tray and spread out evenly.
• Bake for 10 minutes, then give the nuts a good stir and bake for a further 5–10 minutes or until the nuts are a deep brown colour.
• Leave to cool, then transfer to an airtight container and use within 4 weeks.
