BROCCOLI AND BACON SALAD

This broccoli and bacon salad, a cherished family favourite, combines the wholesome goodness of broccoli with the savoury delight of crispy bacon. As a nutritionist, I appreciate its balance of fibre and protein, making it a deliciously nutritious choice for any gathering.
Ingredients:
Salad
olive oil for frying
1 medium onion, diced finely
2 slices bacon, diced finely
1 broccoli head, chopped finely
½ cup sunflower seeds
½ cup sultanas
Dressing
1 cup mayonnaise
¼ cup pure maple syrup
1 tbsp apple cider vinegar
(or any white vinegar)
Method:
• Heat a small frying pan over a medium heat.
• Add a dash of olive oil and cook the bacon and onion for 3–4 minutes or until golden brown. Leave to cool.
• Combine the dressing ingredients in a small bowl.
• Mix the salad ingredients in a bowl and pour enough of the dressing over the salad as you wish.
• Toss to combine and season to taste. Serve chilled.
Serves: 4
Prep Time: 10 minutes
Cooking Time: 5 minutes

😀 I made this lovely salad last night. I had some nice fresh broccoli in the garden, and not that much of a fan of it cooked. This recipe was fresh and so tasty. Totally wonderful. Will be making this many more times.
