INDIAN BROWN RICE SALAD

What better (and easier!!) way to feed a family over summer. Salads are a genius (read budget friendly and quick!) way to spend minimal time in the kitchen while still making sure there's something healthy and delicious on the table! Brown rice, with its lower glycaemic index and rich nutrients, is a filling, gluten free wholegrain. Perfect for a summer bbq, picnics at the beach or for work lunches!



Ingredients:

Salad

2 cups cooked brown rice, cooled

(1 cup of uncooked brown rice, cooked following packet instructions)

1 red capsicum, diced

1 yellow capsicum, diced

1 cup currants

2 spring onions, finely chopped

1 cup cashews, roughly chopped

salt and pepper to taste

Dressing

1/4 cup mayonnaise

1/4 cup plain Greek yoghurt

1-2 tbsp curry powder

Juice of 1 lemon


Method:

  • Combine the dressing ingredients in a small bowl.

  • Mix the salad ingredients in a bowl.

  • Pour the dressing over the salad, mix well and season to taste. Serve chilled.


Serves: 6

Prep Time: 10 minutes

Cooking Time: 25 minutes
