COCONUT AND CRANBERRY LOAF

The oil in the coconut means there is no need to add butter or oil. If you don’t have cranberries, it works just as well with chopped dried apricots.

Ingredients: 1½ cups wholemeal flour 1½ cups desiccated coconut ¾ cup raw sugar 1 cup milk ½ cup dried cranberries 3 tsp baking powder 1 tsp vanilla extract

Method: • Preheat oven to 180°C (350°F) and grease and line a loaf tin. • Place all ingredients in a bowl and mix until well combined. • Pour the mixture into the loaf tin and bake for 30 minutes or until a skewer inserted in the centre of the loaf comes out clean.

Serves: 8 Prep Time: 5 minutes Cooking Time: 30 minutes
