LEMON BLISS BALLS

A healthy little sweet, bite-size treat that reminds me of a lemon meringue pie. You can substitute the lemon for lime or orange if you prefer, and swap the cashew nuts for unsalted almonds or sunflower seeds. You can also add protein powder – just add more fruit juice to the mixture so it doesn’t get too dry. They’re freezer friendly too!

INGREDIENTS

1 cup raw unsalted cashew nuts

4 tbsp honey

2 tbsp fresh lemon juice

lemon zest from 2 lemons

1 cup desiccated coconut, plus 1/4 cup for rolling


METHOD

• Place all the ingredients in a food processor.

• Blitz until finely chopped and mixture comes together.

• Take large teaspoonfuls and roll into balls.

• Roll the balls in the extra coconut.

• Leave to set in fridge. Serve chilled.

• Store in the fridge for up to a week or freeze for up to one month.
