Elevate your dessert game effortlessly with this Coconut Panna Cotta. Impress your guests at your next dinner party with this quick and easy treat. Top it off with a dollop of coconut yoghurt, toasted coconut and passionfruit pulp, chia jam or raspberry compote for a show-stopping, nutritionist-approved delight that’s both delicious and wholesome.
1½ tsp gelatine powder
¼ cup water
1 x 400ml tin coconut cream
1/3 cup coconut sugar
1 tsp vanilla extract
· Mix the gelatine and water in a small bowl and leave to set for 5–10 minutes.
· In the meantime, combine the remaining ingredients in a medium saucepan and heat over medium heat until small bubbles start to form (do not boil).
· Remove from the heat and whisk in the gelatine. Pour the mixture into individual serving dishes.
· Place in the refrigerator until set, at least 3 hours. Serve chilled.
