LEMON CHEESECAKE WITH BERRY SAUCE

With a sweet, buttery base and a smooth, creamy filling, is it any wonder the classic cheesecake has stood the test of time?

Ingredients:
Cheesecake
1 packet (250g/8.8oz) plain weet biscuits, crushed
125g (4.4oz) butter, melted
250g (8.8oz) cream cheese, at room temperature
1 x 395g (14oz) tin sweetened condensed milk
1/3 cup lemon juice
Berry Sauce
1 cup berries, fresh or frozen
1/3 cup sugar
1 tbsp cornflour (cornstarch)
2 tbsp water
1/2 tbsp lemon juice
Method:
Grease a 20cm (8 inch) round dish.
Place the biscuits in a large bowl. Add the melted butter and mix together.
Press into the prepared dish. Chill while preparing the filling.
Beat the cream cheese, condensed milk and lemon juice in a large bowl until smooth, then pour over the biscuit base.
Chill in the fridge for at least 2 hours or until ready to serve.
Slice and serve with the berry sauce.
To make the sauce, mix the berry sauce ingredients together in a small saucepan and simmer over a low heat until the sauce thickens slightly. Pour into a bowl and let cool.
