Savour the flavours of Mexico with these kumara stuffed with wholesome fillings. They are satisfying and help to regulate blood sugar levels in the body. If kumara is too expensive, you can use potatoes. Leave out the cheese for a dairy-free version. You can also swap the black beans for kidney beans. And they can be cooked in the air fryer!

Ingredients:

4 large kumara (sweet potato), well scrubbed

1 x 420g tin black beans, drained and rinsed

1/2 red capsicum, finely chopped

1/2 red onion, finely chopped

1/2 cup whole kernal corn

1 large tomatoe, diced

1/2 cup roughly chopped coriander

1/2 cup grated cheese

salt and pepper to taste

Method:

  • Preheat the oven to 180°C.

  • Prick the kumara all over with a fork and place in the oven. Cook until soft (about 35-40 minutes). Or, you can place them in the microwave and cook until soft, approx. 15 minutes.

  • Once cooled, carefully scoop out the centre, leaving the kumara skin intact, and mash the flesh.

  • Combine the remaining ingredients, except the cheese, in a bowl.

  • Spoon the mixture back into the kumara skins.

  • Sprinkle with grated cheese.

  • Bake for 15-20 minutes or until golden brown on top.

Serves: 4

Prep Time: 15 minutes

Cooking Time: 55-60 minutes
