If you're wanting a comforting winter meal, let the slow cooker do the heavy lifting with this one. Use lamb chops if shanks are unavailable.

Ingredients:
4 lamb shanks
1 small onion, finely chopped
2 garlic cloves, crushed
2 carrots, finely sliced
2 stalks celery, finely sliced
1 x 400g tin diced tomatoes
1 cup beef stock
2 tsp fresh or dried rosemary
2 tbsp tomato paste
salt and pepper to taste
Method:
Place all the ingredients into the slow cooker.
Cook on high for 4 hours or on low for 8 hours until the meat and vegetables are tender.
If you would like to thicken the sauce, then make a slurry by mixing a tablespoon of cornflour in a little water and stir through 20 minutes before serving.
Season with salt and plenty of pepper. Serve hot with steamed greens.
Serves: 4
Prep Time: 10 minutes
Cooking Time: 4 - 8 hours
