SLOW COOKER MOROCCAN APRICOT CHICKEN

It only takes a few minutes to prepare this recipe. Using store-bought Moroccan seasoning cuts down on having to use an array of other spices and adds that little bit of heat without it being overpowering. Add to that the sweet tanginess of the apricots and honey and your taste buds are going to be in for a treat!

Ingredients:
1kg skinless, boneless chicken thighs
410g tin apricot halves
1/2 packet (30g) dried French onion soup mix
2 tbsp Moroccan seasoning
1 tbsp honey
chopped mint, to serve (optional)
rice or couscous, to serve
Method:
Place the chicken into a slow cooker. Drain the apricots and reserve the juice. Add the drained apricots to the slow cooker.
Add enough water to the reserved juice to make up 1 cup (250ml) liquid. Add the soup mix, Moroccan seasoning and honey and whisk until well combined. Pour over the chicken and apricots.
Cover and cook on high for 4 hours or low for 7-8 hours, until the chicken is very tender.
Sprinkle with mint, if using, and serve with rice or couscous.

Prep Time: 5 minutes
Cooking Time: 4 hours or 7-8 hours
