Slow Cooker Rotisserie-Style Chicken

If you want fall-off-the-bone, juicy chicken, then this is the recipe for you! You can experiment with all kinds of herbs and spices, but here is one delicious combo. Perfect for a prepare-ahead dinner, combined with an easy salad, or an easy addition to weekly prepping for mid week lunches!

Ingredients:
1 whole chicken (if using from frozen, ensure it has fully thawed)
2 tbsp oil
1 1/2 tbsp ground paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp freshly ground black pepper
1 tsp salt
1/4 tsp or more cayenne pepper (optional if you like it hot!)
Method:
Pat the chicken dry with paper towels, then rub the chicken all over with the oil.
Mix the rest of the ingredients in a small bowl, and then rub it all over the chicken.
Place the chicken in the slow cooker (breast side up) and cook for 4-5 hours on high or 6-8 hours on low until the chicken is cooked through.
If you want to crisp up the skin after cooking, place the chicken on a baking tray, drizzle with a little oil and grill in the oven for 5 - 10 minutes. Keep an eye on it to make sure it doesn't burn.
Serves: 4-6
Prep Time: 5 minutes
Cooking Time: 4 - 5 or 6 - 8 hours, depending on cooking method.
