SPICED APPLE MUFFINS

Indulge in these muffins for a nutritious, protein-packed lunchbox filler or to keep the kids full and happy at home! Apples are easy to find, affordable and nutritious. Or you can swap the apples for other fruits like tinned pineapple, peaches or pears.

Ingredients:
2 cups ground almonds
1/2 cup GF self-raising flour (or self-raising flour if not GF)
1 tsp cinnamon, plus extra for sprinkling
1/2 tsp baking soda
3 eggs. lightly beaten
1 x 400g tin diced apples
1 tsp vanilla extract
1 tbsp honey
1/3 cup coconut oil, melted
Method:
Preheat oven to180°C and line a muffin tin with paper liners.
Mix all the dry ingredients in a large bowl.
In a separate bowl, mix the wet ingredients.
Add the wet ingredients to the dry ingredients and fold until just combined.
Spoon the mixture into the prepared tin. Sprinkle tops with extra cinnamon if desired.
Bake for 15-20 minutes or until golden brown on top.
