ONE-BOWL CHOCOLATE COFFEE CAKE

This one-bowl cake is rich and moist, and the addition of coffee really brings out the chocolate flavour. It's also a cinch to make and clean-up is minimal!

Ingredients:
Cake
125g (4.4oz) butter, cubed
1 1/2 cups castor sugar
1 cup boiling water
3 tbsp cocoa powder
1 tbsp instant coffee
1/2 tsp baking soda
2 eggs, lightly beaten
1 1/2 cups flour
2 tsp baking powder
Icing
1 tbsp instant coffee
2 tbsp boiling water
50g (1.7oz) butter, softened
1 1/2 cups icing sugar
1 tsp cocoa powder
Method:
Preheat oven to 180°C (350°F) and grease and line a 20cm (8inch) square cake tin.
Place the butter, sugar, water, cocoa powder, coffee and baking soda in a large bowl and whisk until the butter has melted.
Stir in the eggs, then sift the flour and baking powder into the mixture.
Whisk until well combined.
Pour into the prepared tin (it's quite a runny mixture) and bake for 40 minutes or until a skewer inserted into the centre comes out clean.
Ice when cool. To make the icing, dissolve the coffee in the boiling water, add the remaining ingredients and whisk until well combined.
Serves: 10

Cooking Time: 40 minutes
