ONE-BOWL CHOCOLATE COFFEE CAKE

This one-bowl cake is rich and moist, and the addition of coffee really brings out the chocolate flavour. It's also a cinch to make and clean-up is minimal!



Ingredients:

Cake

125g (4.4oz) butter, cubed

1 1/2 cups castor sugar

1 cup boiling water

3 tbsp cocoa powder

1 tbsp instant coffee

1/2 tsp baking soda

2 eggs, lightly beaten

1 1/2 cups flour

2 tsp baking powder


Icing

1 tbsp instant coffee

2 tbsp boiling water

50g (1.7oz) butter, softened

1 1/2 cups icing sugar

1 tsp cocoa powder


Method:

  • Preheat oven to 180°C (350°F) and grease and line a 20cm (8inch) square cake tin.

  • Place the butter, sugar, water, cocoa powder, coffee and baking soda in a large bowl and whisk until the butter has melted.

  • Stir in the eggs, then sift the flour and baking powder into the mixture.

  • Whisk until well combined.

  • Pour into the prepared tin (it's quite a runny mixture) and bake for 40 minutes or until a skewer inserted into the centre comes out clean.

  • Ice when cool. To make the icing, dissolve the coffee in the boiling water, add the remaining ingredients and whisk until well combined.

Cooking Time: 40 minutes
