ANY WHICH WAY COOKIES

One cookie mixture - so many options. This recipe will become your go-to cookie recipe. They are crisp on the outside and gooey in the middle and are so easy to adapt to either your favourite flavour combinations, or whatever you have in the pantry!

Ingredients:
115g (4oz) butter, melted
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla extract
1 1/4 cups flour
1/2 tsp baking soda
1/2 tsp salt
Variations: 2 tbsp each of chopped white chocolate and macadamia nuts; 1 tbsp cocoa powder and 2 tbsp peanuts; 2 tbsp chocolate chips; 2 tbsp each of rolled oats and sultanas; 1 tsp ginger powder; 2 tbsp desiccated coconut.
Method:
Pour the melted butter into a large bowl.
Add the sugars and mix until well combined.
Add the egg and vanilla extract and mix until well combined.
Sift in the flour, baking soda and slat.
At this stage, add your extras.
Mix until a dough is formed.
Place the bowl in the fridge for 15 minutes to firm up.
Preheat oven to 180°C (350°F) and grease a baking tray.
Roll the dough into golf ball size balls and place on the tray, leaving room for the cookies to spread. Do not flatten them.
Bake for 12-15 minutes or until golden.
Serves: 12
Prep Time: 10 minutes (plus firming time 15 minutes)
Cooking Time: 12-15 minutes.
