CHOCOLATE WEET-BIX SLICE

Sink your teeth into this crunchy, chocolatey treat and you'll know why this classic Kiwi recipe has stood the test of time. And by the way, if you don't have time to ice this slice, don't worry - it's still delicious.

Ingredients:
180g (6.3oz) butter
1 cup self-raising flour
1 cup desiccated coconut
3 Weet-Bix, crushed
3/4 cup white sugar
1/4 cup cocoa powder
1 tsp vanilla extract
your favourite chocolate icing (optional)
extra desiccated coconut for sprinkling (optional)
Method:
Preheat oven to 180°C (350°F) and grease and line a 20cm (8 inch) square baking tin.
Melt the butter in a large saucepan, then remove from the heat.
Add the remaining ingredients and stir until well combined.
Tip the mixture into the prepared tin, spread and press out evenly.
Bake for 15-20 minutes until firm. Cool in tin.
Once cooled, ice with your favourite chocolate icing and sprinkle over a little extra coconut.
