ORANGE CAKE

This recipe is an old favourite. All the ingredients are thrown together into one bowl and beaten. The result is a light, buttery citrus cake, perfect for this time of year. The oranges can be replaced with lemons or limes for a different citrus twist!



Ingredients:

Cake

125g (4.4oz) butter, softened

1 1/2 cups self-raising flour

2 eggs

3/4 cup caster sugar

1/4 cup milk

1/4 cup orange juice

1 tbsp orange zest


Orange icing

25g (1oz) butter, melted

1 1/2 cups icing sugar

2 tbsp orange juice

1 tsp orange zest


Method:

  • Preheat oven to 180°C (350°F) and grease and line a loaf tin.

  • Place all the cake ingredients into a large mixing bowl and beat until light and fluffy, approx 3 minutes.

  • Pour the mixture into the prepared tin and bake for 30-40 minutes or until a skewer inserted in the centre comes out clean.

  • When cold, ice with orange icing. To make the icing, place all the icing ingredients in a small bowl and mix until well combined.


Serves: 8

Prep Time: 15 minutes

Cooking Time: 30-40 minutes
