BEEF AND MUSHROOM LETTUCE CUPS

The Asian flavours in this recipe are classic. You can also use other types of mince such as lamb, chicken or pork. This is a low-carbohydrate dinner option, and kids love the fun of eating out of a lettuce leaf! Add other vegetables, such as zucchini, eggplant or capsicum to the frying pan when you add the mushrooms for extra nutrition, or to stretch the meat a bit further! Garnish with fresh mint or coriander if desired.

Ingredients:
1 tbsp olive oil
500g beef mince
1/2 onion, finely chopped
1 tbsp finely grated fresh ginger
2 garlic cloves, crushed
1 cup thinly sliced button mushrooms
2 tbsp tamari (or soy if not GF)
8 iceberg lettuce leaves, washed
Method:
Heat oil in a large frying pan over a medium heat.
Add the beef, onion, garlic and ginger, and cook for 8-10 minutes until evenly browned.
Add the mushrooms and tamari, and cook for a further 3 minutes.
Season with salt and pepper.
Spoon the mixture into the lettuce leaves and serve warm.
Serves: 4
