You will also find this recipe in my "Five Ingredients" cookbook on page 35. Check it out here.
Ingredients
1½ cups (350g) mashed ripe bananas (approximately 3 large bananas)
1 cup (220g) brown sugar
2 eggs
½ cup (125ml) neutral oil (e.g., canola, vegetable, or grapeseed)
1 tsp vanilla extract (optional)
1½ cups (225g) self-raising flour
Method
Preheat the Oven
Preheat your oven to 180°C. Grease a 23cm round cake pan and line it with baking paper.
Prepare the Batter
In a mixing bowl, combine the bananas, brown sugar, eggs, oil, and vanilla (if using). Whisk until the mixture is well combined.
Mix in the Flour
Sift the self-raising flour into the bowl. Gently mix until just combined. Be careful not to overmix, as this could make the cake dense.
Pour the Mixture
Pour the batter into the prepared pan. Spread it out evenly.
Bake the Cake
Bake in the preheated oven for 30-35 minutes. The cake is done when a skewer inserted into the center comes out clean and the top is golden brown.
Cool and Store
Let the cake cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely. Store in an airtight container for up to 1 week or freeze for up to 3 months.
Serving Suggestions
This banana cake serves 12 and is ideal for various occasions. It can be enjoyed as a breakfast treat, an afternoon snack, or a dessert after dinner.
Pairing Ideas
