This is the only muffin recipe you will ever need. I make a batch of these muffins each week for work. They are perfect for our morning tea. I usually use raw sugar and wholemeal flour to enhance their health benefits.
Ingredients for the Perfect Muffins
2 cups plain flour
1 cup sugar
2 tsp baking powder
100g (4oz) butter, melted
1 cup milk
2 eggs, beaten
1 cup of any of the following: berries, fruit, coconut, dried fruit, or chocolate chips
Easy Method to Make Muffins
Preheat your oven to 180°C (350°F). Grease a 12-cup muffin tray.
In a large bowl, combine all the dry ingredients.
In a separate bowl, mix all the wet ingredients together.
Pour the wet ingredients into the dry mix and stir until just combined.
Spoon the batter evenly into the prepared muffin tin.
Bake for 15–20 minutes. The muffins are done when they spring back lightly when pressed.
Bake and Enjoy!
Once baked, let them cool for a few minutes before transferring them to a cooling rack. These muffins make for a delicious breakfast or snack. They are versatile and can easily accommodate your favorite add-ins, whether they be fruity, chocolaty, or nutty.
