GINGER LOAF

You can't go past this recipe when you need time out to curl up with a good book, a cup of tea and a comforting treat. This easy to make loaf is delectably moist and has the right mix of warming spices.

Ingredients:
125g (4.4oz) butter
1 cup milk
3/4 cup white sugar
2 tbsp golden syrup
2 tsp baking soda
2 cups flour
1 tbsp ground ginger
1 tsp mixed spice
Method:
Place the butter, milk, sugar, golden syrup and baking soda in a large pot and melt over a medium heat. Keep a close eye on it while it's heating, as the baking soda will cause the mixture to rise.
Remove from the heat and allow to cool.
Preheat the oven to 180°C (350°F) and grease and line a loaf tin.
Sift the flour, ginger and mixed spice into the mixture and mix until well combined.
Pour the batter into the prepared tin and bake for 40-45 minutes or until a skewer inserted into the centre comes out clean.
Serves: 10
Prep Time: 10 minutes, plus cooling time (approx. 30 minutes)
Cooking Time: 40-45 minutes
