SOUR CREAM SPICE CAKE

I love the combination of the warm spices and the sweet sultanas in this recipe! It can be served warm with whipped cream as a simple dessert, or cold with a cuppa for a morning or afternoon tea treat.



Ingredients:

1 cup sour cream

1 cup white sugar

125g (4.40z) butter, melted

2 eggs

1 tsp vanilla extract

1 1/2 cups self-raising flour

2 tsp ground cinnamon

1 tsp mixed spice

1/2 cup sultanas


Method:

  • Preheat oven to 180°C (350°F) and grease and line a 20cm (8 inch) cake tin.

  • Whisk the sour cream, sugar, butter, eggs and vanilla extract in a large bowl until well combined.

  • Sift in the flour, cinnamon and mixed spice, and mix until just combined.

  • Stir in the sultanas.

  • Pour the mixture into the prepared tin and bake for 30 minutes or until a skewer inserted into the centre comes out clean.


Serves: 9

Prep Time: 5 minutes

Cooking Time: 30 minutes
