SOUR CREAM SPICE CAKE

I love the combination of the warm spices and the sweet sultanas in this recipe! It can be served warm with whipped cream as a simple dessert, or cold with a cuppa for a morning or afternoon tea treat.

Ingredients:
1 cup sour cream
1 cup white sugar
125g (4.40z) butter, melted
2 eggs
1 tsp vanilla extract
1 1/2 cups self-raising flour
2 tsp ground cinnamon
1 tsp mixed spice
1/2 cup sultanas
Method:
Preheat oven to 180°C (350°F) and grease and line a 20cm (8 inch) cake tin.
Whisk the sour cream, sugar, butter, eggs and vanilla extract in a large bowl until well combined.
Sift in the flour, cinnamon and mixed spice, and mix until just combined.
Stir in the sultanas.
Pour the mixture into the prepared tin and bake for 30 minutes or until a skewer inserted into the centre comes out clean.
Serves: 9

Cooking Time: 30 minutes
