HAWAIIAN STUFFED SWEET POTATOES

Here is an easy vegetarian recipe that will fill you up! It's an easy lunch idea or a light dinner option when paired with a salad. They are also perfect cooked in an air fryer. Feel free to add chopped ham or cooked bacon if desired.



Ingredients

2 large (250g each) sweet potatoes, scrubbed but left unpeeled

1/2 cup (120g) sour cream, plus extra to serve

227g tin crushed pineapple, drained

1 red onion, finely chopped

1/2 cup (60g) grated tasty cheese, plus extra for topping

chopped parsley, to serve (optional)


Method

  • Preheat oven to 180°C (350°F). Line a baking tray with baking paper.

  • Prick the sweet potatoes all over with a fork. Microwave for about 10 minutes, until soft and cooked through. Set aside until cool enough to handle.

  • Cut each sweet potato in half horizontally. Carefully scoop out the flesh, leaving a thin layer of flesh behind to keep the skin intact. Place the flesh, sour cream, pineapple, onion and cheese in a bowl and mash until well combined and creamy. Season with salt and plenty of pepper.

  • Place the sweet potato cases onto the prepared tray. Spoon the mixture into the cases and top with extra cheese.

  • Bake for 20-30 minutes or until the cheese is golden and bubbly. Leave to cool for 10 minutes. Serve warm, topped with extra sour cream, and parsley if using.
