HAWAIIAN STUFFED SWEET POTATOES

Here is an easy vegetarian recipe that will fill you up! It's an easy lunch idea or a light dinner option when paired with a salad. They are also perfect cooked in an air fryer. Feel free to add chopped ham or cooked bacon if desired.

Ingredients
2 large (250g each) sweet potatoes, scrubbed but left unpeeled
1/2 cup (120g) sour cream, plus extra to serve
227g tin crushed pineapple, drained
1 red onion, finely chopped
1/2 cup (60g) grated tasty cheese, plus extra for topping
chopped parsley, to serve (optional)
Method
Preheat oven to 180°C (350°F). Line a baking tray with baking paper.
Prick the sweet potatoes all over with a fork. Microwave for about 10 minutes, until soft and cooked through. Set aside until cool enough to handle.
Cut each sweet potato in half horizontally. Carefully scoop out the flesh, leaving a thin layer of flesh behind to keep the skin intact. Place the flesh, sour cream, pineapple, onion and cheese in a bowl and mash until well combined and creamy. Season with salt and plenty of pepper.
Place the sweet potato cases onto the prepared tray. Spoon the mixture into the cases and top with extra cheese.
Bake for 20-30 minutes or until the cheese is golden and bubbly. Leave to cool for 10 minutes. Serve warm, topped with extra sour cream, and parsley if using.
