PEA SOUP IN A FLASH

Who would have thought that having a packet of frozen peas in your freezer meant you had a meal on hand? Served with buttered toast or bread rolls for a satisfying meal in a flash. You could also replace the peas with frozen corn for a quick corn chowder. Lovely served with a dollop o sour cream and chopped crispy parsley.

Ingredients:
5 cups frozen peas
1 onion, finely chopped
1 tsp crushed garlic
1 tbsp oil
enough stock (chicken or vegetable) to cover peas (approx. 3 cups)
Method:
In a large pot, heat the oil over a low heat and fry the onion, without browning, for 5 minutes.
Add the garlic and fry for an additional 1 minute.
Add the peas and stock, increase heat and simmer for approx. 5 minutes or until the peas are soft.
Blend in a blender or with a stick blender until smooth.
Feel free to add a handful of chopped fresh herbs like parsley, chives, mint or basil for extra flavour.
Season to taste.
Serves: 4
Prep Time: 3 minutes
Cooking Time: 11-15 minutes
