VEGETABLE SLICE

Packed with flavour and goodness, this slice makes the perfect lunch, light dinner or picnic addition. Feel free to add chopped herbs or some crumbled feta. Delicious served with a dollop of sour cream and relish.

Ingredients:
6 eggs, lightly beaten
3 cups grated vegetables (for example, carrot, zucchini, pumpkin, potato, kumara)
1 onion, diced
1 cup grated tasty cheese
2/3 cup self-raising flour
200g (7oz) ham, diced (optional)
1 tsp mustard powder
1 tsp each salt and pepper
Method:
Preheat oven to 180°C (350°F) and grease a 20cm x 30cm baking dish.
Place all the ingredients in a large bowl and mix until well combined.
Pour the mixture into the prepared dish.
Bake for 34-45 minutes or until golden brown.

Cooking Time: 35-45 minutes
