You will be surprised at the way this vegetarian meatloaf looks and tastes just like a real meatloaf.
Ingredients: 4 eggs 2 cups rolled oats 2 cups cottage cheese 2 onions, chopped finely 4 tbsp oil 2 tbsp soy sauce 2 tsp marmite or vegemite handful of fresh herbs, chopped (e.g. parsley, chives, mint, sage, thyme, basil) cheese, grated (optional)
Method: • Preheat oven to 180°C (350°F) and grease a loaf tin.
• Place the ingredients in a bowl and mix to combine.
• Press the mixture into the prepared tin. • Sprinkle the top with a little grated cheese if using.
• Bake for 45 minutes until cooked and golden. • Serve hot or cold. • This loaf is lovely served with a fresh salad.
Serves: 6 Prep Time: 10 minutes
Cooking Time: 45 minutes
