5 INGREDIENT LEMON SQUARES



If you love all things lemon, then I am sure this recipe will become a favourite. It has a crunchy base and a creamy, lemony filling. Simple but very delicious!


Prep time: 10 minutes

Cooking time: 15 minutes (+ 3 hours chilling)

Makes: 12


INGREDIENTS

250g pkt plain sweet biscuits, crushed

140g butter, melted and cooled

395g tin sweetened condensed milk

1 tsp finely grated lemon rind

½ cup (125ml) lemon juice

4 eggs


METHOD

• Preheat the oven to 180°C.

• Grease a 20cm × 30cm slice pan and line with baking paper.

• Place the crushed biscuits and melted butter into a bowl and mix until well combined.

• Press into the prepared pan in an even layer.

• Refrigerate while you prepare the filling.

• Combine the condensed milk, lemon rind, juice and

eggs in a bowl.

• Beat with electric beaters for about 2 minutes, until creamy (it is quite a runny mixture).

• Pour over the biscuit base.

• Bake for 15 minutes or until the centre is set.

• Cool, then place in the fridge for at least 3 hours to chill.

• Cut into squares to serve.

• Store in an airtight container in the fridge for up to 1 week.
