PARMESAN AND MUSTARD LAMB CHOPS

Parmesan, mustard and lamb is a combination of flavours made in heaven! Add to this the crunch of the crust and the tender, juicy centre, and you've found the perfect way to serve lamb chops. You can also replace the mustard with basil pesto, which is equally delicious.

Ingredients
1 egg
2 tbsp Dijon mustard
2 tbsp cornflour
1 cup (75g) panko breadcrumbs
1/2 cup (40g) finely grated parmesan
4 lamb shoulder chops or 8 loin chops
salad, crusty bread and chopped parsley, to serve (optional)
Method
Preheat the oven to 180°C. Grease a baking tray.
Whisk the egg, mustard and cornflour in a shallow dish until well combined. Combine the breadcrumbs and cheese in another shallow dish.
Working one at a time, dip a chop into the egg mixture, then coat in the breadcrumbs. Place onto the prepared tray.
Bake for 35-45 minutes, turning halfway through, until cooked through, golden and crispy.
Serve with salad and crusty bread, sprinkled with parsley if using.
