SLOW COOKER HONEY-GARLIC CHICKEN

If you think you don't have time to cook, then think again! This recipe literally takes 5 minutes to prepare, at which point your slow cooker will take over. In a few hours (while you go and do other things), it will present you with tasty meal your family is going to rave about. The chicken is so tender it will almost fall off the bone and any leftover sauce will be lapped up. Serve with rice or mashed potatoes.

Ingredients:
6-8 skinless, bone-in chicken thighs
1/3 cup (80ml) runny honey
1/4 cup (60ml) BBQ sauce or tomato sauce
1/4 cup (60ml) salt-reduced soy sauce
6 garlic cloves, crushed
1 tbsp cornflour (optional)
rice or mashed potatoes, and chopped parsley or coriander, to serve (optional)
Method:
Place the chicken into a slow cooker. Place the remaining ingredients (except the cornflour) in a jug with 1/4 cup (60ml) water and whisk to combine. Pour over the chicken.
Cover and cook on high for 2-3 hours or low for 4-5 hours, until the chicken is very tender. If you would like to thicken the sauce, mix the cornflour with a little water then mix in with the chicken about 20 minutes before the end of the cooking time.
Serve with rice or mashed potatoes, and chopped herbs, if using.
