ZESTY MACAROONS

These coconut, lime and chocolate macaroons are delicious and definitely don't taste like the should be so good for you! Refined sugar free and high in healthy fats, these are a guilt-free treat! Perfect to have stored in the fridge for when you need a little treat. You can swap the lime zest for any citrus zest or use freeze-dried fruit such as raspberries or strawberries.



Ingredients:

Macaroons

2 cups shredded coconut

1/2 cup ground almonds

1/4 cup coconut oil, melted

1/3 cup pure maple syrup

zest of 2 limes

1/2 tsp vanilla extract

2-3 tsp cold water


Chocolate Dip (optional)

100g dark chocolate, melted

1/2 tsp coconut oil, melted

pinch of salt


Method:

  • Mx the macaroon ingredients until well combined.

  • Form into balls using wet hands, and place onto a tray lined with baking paper.

  • Refrigerate for 30 minutes to set.

  • remove from the fridge and drizzle over or dip into the melted chocolate mix.

  • Place back into the fridge and allow to set for 12 hours.

  • Keep in the fridge for up to a week. Serve chilled.
