CRUSTLESS LEMON TART

This tart is the perfect entertaining recipe, as it can be made ahead of time and can be served warm or cold. It’s so easy to mix in one bowl, with no fiddly pastry to contend with. Delicious with whipped cream, ice cream or crème fraiche.


Ingredients

3 eggs

½ cup flour

1 cup white sugar

100g (3.5oz) butter, melted

1 tbsp lemon zest

½ cup lemon juice

1 cup cream

½ tsp vanilla extract

icing sugar to serve


Method:

• Preheat oven to 180°C (350°F) and grease and line the bottom of a 20 cm (8 inch) round springform cake pan.

• Place the eggs in a bowl and whisk lightly, then whisk in the flour until well combined.

• Add the remaining ingredients and whisk until well combined.

• Pour the mixture into the prepared pan and bake for 35–40 minutes until the edges are lightly browned. The centre will still be a little wobbly.

• Leave in the pan to cool slightly before removing.

• Dust with icing sugar to serve.

Cooking Time: 35-40 minutes
